Cauliflower Raita.
Fresh raw cauliflower is grated up and mixed with yogurt. Cumin seeds is added to hot oil to release its flavor and onion is fried till brown. The seasoning is then added to the cauliflower raita. Serve cauliflower raita with steamed rice or with roti etc…
Makes: around 4 Servings of Cauliflower Raita.
Ingredients:
Cauliflower 3 – 5 Florets
Plain Yogurt 1 1/2 Cups
Onion 1/2 of Small One
Green Chiles 2 – 3
Cumin Seeds 1/2 tsp
Cilantro few Sprigs
Salt to taste
Oil 1 tbsp
Method of preparation:
Peel and finely chop the onion.
Remove stems, wash and slice the green chiles.
Wash and finely chop the cilantro.
Whisk yogurt in a mixing bowl and keep aside.
Wash the cauliflower florets under fresh water.
Grate the florets using thick side of the grater.
Sprinkle few pinches of salt over the grated cauliflower and keep aside.
Leave for couple of minute and add it to the yogurt bowl and mix well.
Stir in cilantro and adjust the salt in the cauliflower raita if necessary.
Heat oil in a pan on medium heat.
Add cumin seeds and let the seeds turn little dark.
Then add the onion and fry till onion turns translucent.
Stir in green chiles and fry till onion turns golden brown in color.
Remove from heat and add to the above cauliflower bowl.
Mix well and serve cauliflower raita with steamed rice or with roti etc…
Notes: Make sure cauliflower is fresh and crisp.
Suggestions: Adjust the consistency of the raita with yogurt or water.
Variations: You can also add a pinch of cumin powder and black pepper powder to the cauliflower raita.
