Roasted Bell Pepper Raita

Red bell pepper is roasted on stove top till its cooked and its skin charred. Roasted bell pepper is then chopped up and briefly fried in tempered oil along with onion. Finally cooked bell pepper is added to the whisked yogurt and served with steamed rice or with any Indian flat bread.

Raita Sandwich

Raita is prepared by mixing thick yogurt with grated vegetables like carrot, cucumber and bell pepper. It is then layered on a toasted bread slice along with spinach and tomato slices. Serve raita sandwich immediately.

Raw Mango Raita

This is a raita made with raw mango. Raw mango is grated on thick side of grater. The mango is then salted and left aside to soften. Finally raw mango is added to the yogurt and is tempered with spices and dals. Serve raw mango raita with spicy or hot rice dishes.

Peanut Raita

Sweet Potato Raita

Sweet potato is boiled in water till soft and peeled. Sweet potato is then diced and folded into whisked yogurt with spring onion and aromatic fennel seeds. Serve sweet potato raita with any fried rice with a sweet note to it.

Avocado Raita

Avocado is ground into paste along with spices. The avocado paste is then whisked with yogurt and tempered with spices. Serve avocado raita chilled with roti or parata.

Onion Raita

Raita is a quick yogurt dish often containing one or more vegetables or fruits. Raita is served as an accompaniment to pulao, biryani, etc as it imparts a cooling affect after the spice and heat. Here, onion is very finely sliced and mixed with plain whisked yogurt which is flavored with home ground spices and fresh herbs.

Makes: around 1 1/2 Cups of Onion Raita.

Cabbage Raita

Spices are added to hot oil to bring out the flavors. Cabbage is finely shredded and added to the hot pan for it to soften a bit. Mix the cabbage mixture with yogurt. Serve cabbage raita with steamed rice or with roti or with pulao.

Cauliflower Raita

Mango Raita

Oil is tempered with mustard seeds and the chopped mango is cooked till it softens. The mango is cooled to room temperature before mixing with whisked yogurt. Serve mango raita with steamed rice or with roti.

Pumpkin Stew Remix

Ingredients:

Pumpkin 10×5 inch piece
Red Onion 1 large
Green chillies 4
Tamarind 3 inch sized ball
Grated Jaggery 1 cup
Talimpu:
Chana dal 1 tsp
Fenugreek seeds 1/2 tsp
Urad dal 1 tsp
Cumin seeds 1 tsp
Mustard seeds 1 tsp
Hing/ Asafoetida 1/2 tsp
Curry leaves 4
Ghee 1 tbsp

Fresh Coconut Raita

Freshly scraped coconut is used while making this raita. Yogurt is whisked with coconut and tempered with spices and dried fruits. This version of coconut raita is hot and sweet at the same time. Serve fresh coconut raita with biryani or with paratha.

Pumpkin Stew

Pumpkin is cooked in water along with sour tamarind, sweet jaggery and red chili powder till little soft. Rice flour is mixed with little water into a smooth paste and stirred into the pumpkin stew to make it thicker. Oil is tempered with spices and added to the pumpkin stew as a final step.

Makes: around 4 Servings of Pumpkin Stew

Ingredients:

Red Pumpkin 1/4 th of Small One
Onion 1
Green Chiles 3
Jaggery 2 (3 inch blocks)
Tamarind 2 – 3 inch sized ball
Fenugreek Seeds a small pinch
Red Chile Powder 1/2 tsp
Turmeric Powder a pinch
Rice Flour 1 tbsp
Salt to taste
Talimpu:
Urad Dal 1/4 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 6
Broken Red Chiles 5
Asafoetida a big pinch
Ghee or Oil 1 tsp

Method of preparation:

Wash thoroughly and chop pumpkin into large chunks.
Pumpkin is generally not peeled for this recipe.
Soak tamarind in quarter cup or more of warm water for sometime and extract all the thick juice.
Peel and chop onion into big chunks or thick slices.
Remove stems, wash and slice the green chiles.
In a small bowl, mix rice flour with couple of tablespoons of water to make thick smooth paste.
Heat a sauce pot on high flame, add red pumpkin chunks, tamarind extract, jaggery, sliced green chiles, fenugreek seeds and a cup or two of plain water.
Bring the water to a heavy boil and reduce the flame to medium.
Let the jaggery dissolve and let pumpkin pieces cook thoroughly while still holding their shape (around 20 min).
Season with red chilli powder and salt and boil for few more minutes.
Slowly stir in the prepared rice flour paste into the pumpkin stew to make it little thick.
Add more rice flour paste if required but make sure the stew is not too thin or not too thick.
Let the stew bubble for a minute before tempering.
Heat oil in a pan on medium flame , add all talimpu ingredients in order.
When mustard seeds almost stop spluttering, add this to the prepared pumpkin stew.
Stir well and serve pumpkin stew with plain steamed rice and dollop of ghee.

Notes: Make sure pumpkin pieces are cooked to the point that they fall apart when lightly pressed.
Suggestions: If the pumpkin stew is too sour, add more jaggery. If the pumpkin stew is too sweet, add more tamarind extract to balance the flavors.

Pumpkin Curry

Pumpkin is boiled in water till little soft. Oil is tempered with spices and cooked pumpkin is added along with sour tamarind extract, sweet jaggery and red chili powder. Coarsely ground mustard seeds and scraped coconut gives this dish its distinct flavor.

Pumpkin Seeds Powder

Red Pumpkin Curry

Red pumpkin is peeled and chopped into small chunks. Oil is tempered with regular spices and chopped pumpkin is cooked in it along with onion till soft. Tamarind gives the pumpkin sourness while jaggery the sweetness.

Pumpkin Halwa

Pumpkin is peeled and chopped and cooked in enough milk till the chopped pumpkin falls apart. Sugar is made into thick syrup and added to the cooked pumpkin. This is stirred and cooked till the pumpkin mixture loses most of the moisture and comes together.
